Cool off during these hot summer days with this classic Spanish recipe! Blend ripe tomatoes, cucumber, cubanelle pepper, garlic, bread, vinegar, and salt until smooth. Slowly drizzle in olive oil while the blender is running for that silky texture ✨. Chill for at least 2 hours, then serve strained and cold with finely diced veggies on top.
🥑 Tip: For a delicious twist, add a ripe avocado to the mix!
Ingredients:
2 lbs (about 1 kg) ripe tomatoes, halved
1 cucumber, peeled and chopped (reserve a little for garnish)
1 cubanelle pepper (reserve a little for garnish)
2 garlic cloves, peeled
2–3 slices of day-old bread, torn into pieces  (optional)
3–4 tablespoons olive oil
2 tablespoons aged sherry vinegar (or to taste)
Salt, to taste
Cold water (optional, for adjusting consistency)
For Garnish:
Finely diced cucumber
Finely diced cubanelle peppers
Finely diced tomato
Garlic croutons
